 Pumpkin Spice Macarons

How to make wonderful Pumpkin Spice Macarons. Make sure you have all your ingredient before starting! The ones made in this tutorial are in Pumpkin Spice flavors for Fall and Thanksgiving type colors. I made mine with an orange Vanilla Creme filling, using food coloring but you can use regular vanilla or actually add orange extract to make a 'Creamsicle' ice cream flavor filling.


Pumpkin Spice Macaron Video Recipe Tutorial

Prep: 1-2hrs
Bake Time: 15-20 min (depending on oven)
Oven Temperature:  280 degrees F

Supplies: 

2/3 cup Almond Meal or ground almonds
1 1/2 cups powdered sugar
3 large egg whites, ROOM TEMPERATURE {very important} 
1 teaspoon Pumpkin Spice
Pinch of Cinnamon
5 tablespoons granulated sugar
1 teaspoon Vanilla Extract
Piping Bag | Ziplock bag
Food Coloring of choice (optional)
Kitchen Scissors




Step 1: 

Trace 1-1.5 inch circles on the back side of Parchment Paper that you will be using as your baking sheet liner. Trace them about 1.5 inches apart in rows as wide as your sheet, yet still have room for macarons to grow while baking.


 

Step 2: 

SIFT {very important} the Almond Meal and Powdered Sugar mixture twice through a mesh sieve. Add your Pumpkin Spice Flavoring/ and pinch of Cinnamon.



Step 3: 

Beat egg whites on high in your Mixer, gradually add granulated sugar tablespoon by tablespoon.
Form 'stiff peaks.'


Step 4: 

FOLD {very important} in almond mixture, add half then add the rest. Fold, do not over mix keep it fluffy. DO NOT OVER MIX {very important}
 
- add your food coloring (optional) I didn't add any to my macarons



Step 5: 

With a Piping Bag or ziplock baggie, fill the bag before cutting end off with kitchen scissors. Then pipe 1.5 inch rounds on parchment paper

Step 6: 

Let the piped macaron rounds sit out on counter for at least 20 min....up to 45min before baking.

 

Step 7: 

Pre-heat oven 280 degrees. Bake for 15 min depending on oven. Leave oven door open after 2min. Keep a watchful eye so that the macarons do NOT burn.

Fillings: 

{recipe below}
Jam
Vanilla filling

Vanilla filling:
7 Tablespoons butter
2 egg whites
3 1/2 Tablespoon Milk
1/4 cup sugar
1 Teaspoon Vanilla Extract
- 1-2 drops orange extract {optional 'Creamsicle' Orange Vanilla}


Step 1: Wisk together egg, milk, sugar over medium heat, until thick like pudding.

Step 2: Then add butter little by little. Med heat bring to boil then remove and set aside until cool.
 
Step 3: Finally add vanilla extract, orange extract (if using), and food coloring (optional.)
 
Step 4: Pipe/ spread in between cookie shells.

Step 5: Decorate tops with Sprinkle circle dots.

Spring Bird Nest Cupcakes Tutorial

How to make DIY Spring Bird Nest Cupcakes Tutorial!
Perfect way to use the candy your little ones accumulated in their Easter Baskets, make these for a picnic, sports day, Spring birthdays, and for Mother's Day. Birds nest go with so many Spring themes and these cupcakes are a great idea for any event. 

Beautiful and easy Spring DIY party idea that you can make and use your extra egg cartons to re-purpose as decor, and also to carry them:) I love when decor can serve a functional purpose. For these Bird Nest Cupcakes I use the mini-sized cupcake paper, then a Tablespoon of cake batter when baking them. That way the cupcakes fit perfectly in the egg carton!
I also baked up some standard size cupcakes for these traditional treats.

Use whatever color you desire for cake and for the frosting and then decorate with chocolate shavings and malted mini chocolate eggs to make the adorable bird nest design:)

Mini-size Bird Nest cupcakes

Supplies:

Frosting
   - canned or homemade
Box of Cake Mix
    - oil/eggs/water per mix instructions
Egg Carton
    - functional / decorative 

Bake. Decorate!

Step 1:

Bake up cupcakes in 'mini-paper' cups.


Step 2:

While they are baking, put chocolate in freezer for a few minutes then grate 1/2 cup chocolate shavings. 


Step 3:

If using a canned frosting simple 'whip' it up and get air into it then place into a plastic piping bag {ziplock bag}...snip hole in it...

Tip: Place cupcakes into carton prior to decorating for best results.


Step 4:

COOL cupcake entirely and then dollop frosting on the top into a peak shape.
-make sure cupcakes are completely COOL!


Step 5:

Sprinkle chocolate shavings and decorate with the malted eggs.

How to make easy BBQ Pulled Pork Sandwiches in the Slow Cooker / Crock Pot!
My family really enjoys a good pulled pork sandwich and this recipe is simple, easy and saves so much time especially for busy families who are always on the go. 

This recipe is also a great idea for parties in order to feed a large crowd a delicious and wholesome entree that is full of flavor. It's multitasking at its finest...just set it up in the crock pot and then tend to the rest of the details of your party. You'll only need a few common ingredients, a slow cooker, and you are set to serve your family a scrumptious BBQ wonderland of a meal!

BBQ Pulled Pork Sandwiches

Ingredients:

Pork Tenderloin / Shoulder Roast
    -to fit slow cooker about 3-4 lbs.
1/3 cup Apple Cider Vinegar
1/2 cup Brown Sugar
1/2 cup Ketchup
1 Tablespoon Salt
1 teaspoon Pepper
1 teaspoon Paprika
1 Tablespoon Garlic Powder
1 teaspoon Onion Powder
1 Tablespoon Chili Pepper
1/2 teaspoon Thyme

Fixings:

Buns
Cheese
Spinach
Purple Cabbage

Time: Low setting- 8hrs.
          High setting- 4hrs.

Step 1:

Trim and place pork loin in slow cooker bottom.


Step 2:

Mix dry ingredients first. Next mix in the wet ingredients, then combine until smooth.


Step 3:

Pour over the tender pork loin and cover, turn on crock pot / slow cooker.


After completely cooked, shred meat with a fork and tongs. Turn temperature setting to 'Warm' if using for service or turn off.

Add grass and eggs/ jelly beans first. Edible grass is fun too yet may get sticky.

Step 2:

Place your Chocolate Rabbit.

Choose where you want to place them, move them there....then close jars.
