Dragon Fruit Spring Salad Recipe
Spring is in the air and it is a fantastic idea to start using some fruits and vegetables that are in season and delicious. Dragon Fruit is a super fruit and has many antioxidant properties for anti-aging and to energize you. This is a great Spring salad for anyone doing a Whole30 program as well just make sure to use all organic raw ingredients and no honey in the salad dressing. I really loved making this salad and the family loved the variety of vegetables with the fruit accompaniment.
I used vegetables I had on hand, and made my own salad dressing using simple ingredients:)

Ingredients:
Dragon Fruit
Spinach
Tomatoes
Carrots
Ham
Bacon
- Organic Whole30 Bacon
Salad Dressing:
Lemon / Lime
Olive Oil
Honey
Step 1:
Squeeze your lemon or lime into a small bowl, mix in a teaspoon of olive oil, then a teaspoon of honey. Whisk together, set aside.
Dragon Fruit Dressing: chop up bit of the fruit and add to dressing, you can also muddle it to get the juices infused into dressing.
Step 2:
Spread a bed of baby Spinach on the plate. Cut up and prep your other fruits, veggies.
Dragon Fruit: To peel your Dragon Fruit, cut it in half, then those halves in half again. Next, scoop out the inside with a large spoon. Finally cut the fruit in cubes.
Serve. Enjoy!
