Asian Spicy Cucumber Kimchi Salad

How to make Cucumber Kim Chi (Asian Cucumber Salad):
Asian Cucumber Salad Kim Chi recipe, give it a try if you dare to enjoy something hot, spicy, and delicious! Traditional hot red pepper powder spicy cucumber salad, also known as Cucumber Kim Chi is native to Korea. This a fresh and flavorful side dish to any meal.

Servings: 12

Ingredients
8-12 Cucumbers (Pickling/Small)
1 Tablespoon Salt
____
3 Teaspoons Garlic (Chopped)
2 Tablespoons Vinegar
1 Tablespoon Sugar
5 Green Onions
1.5-2 Tablespoons Korean Red Pepper Powder
2 Teaspoons Salt
1 Tablespoon Roasted Sesame Seeds

Directions
1.Cut up cucumbers in desired size and toss/rub with the first (1 Tablespoon) of salt.

2.Next mix in the garlic, chopped green onions, vinegar, & sugar. Then add the korean red pepper powder to fit your taste, add slowly usually just enough so that cucumbers have the red color.

3.Finally add remaining (2 teaspoons) salt to taste, add slowly. Garnish and toss with the roasted sesame seeds to taste. Set aside for ingredients to rest for at least 20 min.


Footnotes
Korean red pepper powder can be found at an asian food market. Roasted sesame seeds can be made fresh or purchased already roasted.
