Snickerdoodle Peach Cobbler Recipe 

Oh. my. goodness., snickerdoodle cookies have been my favorite cookie ever since I was a little baker in my mom's kitchen! Now I've got my kids hooked, they LOVE snickerdoodles....and so does my lovely hubby. I always bring snickerdoodles to parties and potlucks, they are the best! Any time I find a recipe idea the includes a cinnamon twist, I think....hmmmm I wonder if I can turn it into a snickerdoodle recipe. Score! This recipe is fabulous!!!!!

Supplies

Peach Filling:
2 cans of peaches
2 tablespoons minute Tapioca
1/4 cup sugar

Cookie Cobbler:

3 Cups of all-purpose flour
1 and 1/3 Cup of sugar
2 teaspoons of cream of tartar
1 teaspoon baking soda
½ teaspoon of kosher salt
2 teaspoons of cinnamon
1 Cup of softened butter (two sticks)
FAST Option: you can also use a pre-made mix and sprinkle batter on top of wet mixture.

Cinnamon Topping:

1 tablespoon sugar
1 teaspoon cinnamon


Step 1:

Preheat oven to 350 degrees F
Coat large casserole dish with non-stick cooking spray. Combine all ingredients for the Peach filling straight into casserole dish, mix and set aside.

Here is what it should look like, not very appetizing per say but it gels and thickens so that your cobbler is smooth and doesn't turn out 'dry.' I had made this at my mom's house, that's her gorgeous antique table she found at a local antique dealer.

This is a close up of the tapioca inside the liquid, set it aside so it has a chance to soak a little while before adding the snickerdoodle topping.

Step 2:

Mix or sift cobbler dry ingredients together thoroughly. Then add in the softened butter until mixture is evenly distributed. Spread cookie cobbler ingredients over the top of the peach filling mixture in casserole dish.


Step 3:

Combine cinnamon topping mix ingredients. Sprinkle the cinnamon topping over entire dish and back for about 45 minutes depending on your oven. It is finished when cobbler looks golden and crisp.

Another great thing about this recipe is that it can be made ahead for when you're having a lot of guests over for dinner or brunch. All you need to do is warm a portion up in the microwave and enjoy with coffee or vanilla ice cream on top. This cobbler is not too sweet but is very scrumptious....
